To make these adorable Easter Cakes you will need:
12 Hollow eggs
food coloring
vinegar
1 box of cake mix, your choice
mini chicks
Eatable grass
flower sprinkles
chocolate icing
cupcake pan
aluminum foil
12 baking cups- your choice in color
First prepare your eggs. Plan on making french toast, quiche, or fritters on the same day so you can use those eggs instead of waster them!
Chose the top or bottom of your egg and punch a large hole, the hole can be about the size of a dime. remove egg white and yolks. Rinse out your eggs and then let them soak in some warm water for about 30 minutes. Rinse them our again and if you can fit your finger into the egg, gently rub the inside. Rinse again and let sit (hole side down) until completely dry.
Using the food coloring and vinegar, color your eggs however you want. :)
Let your eggs dry completely.
Prepare your cake mix according to your own recipe or by the box.
Take the aluminum foil and your cupcake pan and create little cups to hold your eggs so they won’t fall over. Fill your eggs with cake batter. Fill them just under half full.
Bake them at about 350 for 20-25 minutes. It will vary so at the 20 minute mark, keep checking them.
They will be SUPER HOT when they are done. There may be some “spill over” from the cake batter. Remove immediately! Next, remove them from the foil and let cool completely.
Go ahead and bake your cupcakes and let them cool as well.
Next you will cut a little hole from the top of the cupcakes in order for the egg to fit snuggly in the cupcake.
Place the egg hole side down and surround your egg with the chocolate icing, making it look like a little nest, add your grass and sprinkles. Place a little icing in the bottom of your chicken feet and add him to the top of your egg!
